This bowl is so beautiful and full of so many flavors and textures! Sushi rolling is not as hard as a I thought, but throwing everything in a bowl is way easier and just as delicious!
We made this in our Weekly Cooking Class!
Ingredients
·         Brown Rice, prepared *sub: any whole grain
·         ¼ cup Shiitake Mushrooms, sautéed
·         1 Nori Sheet, crumbled
·         1 Carrot, shredded
·         1 Cucumber, cut into thin strips
·         4 Asparagus Spears, lightly sautéed
·         1 Avocado
·         Smoked Tofu
·         Plant Based Mayo
·         ~1 tablespoon Hot Sauce
·         Green Onion, diagonal slices
·         Sesame Seeds
·         1 handful Greens of Choice
·         Optional: Pickled Ginger / Wasabi
Instructions
1.    Prepare dressing by combining Plant Based Mayo and hot sauce of choice (adjust to desired spiciness). Refrigerate.
2.    Prepare Smoked Tofu and brown rice. Stir nori sheet into rice.
3.    In a bowl, or on a plate with sides, assemble ingredients in a manner that looks beautiful to you. Drizzle dressing, sprinkle green onion and sesame seeds. Enjoy!
