Sticky Garlicky Plant Based Salmon

Missing fish or are just looking for another fun and flavorful way to prepare tofu – this recipe is glorious over a whole grain or whole grain noodles with its thick, sweet, and savory sauce! We made this in our Weekly Cooking Class!

Marinade

· 1 block extra firm tofu, pressed

· 1 cup low sodium vegetable broth

· 1 sheet nori, torn into pieces

· 3 tablespoons apple cider vinegar

· 1 small raw beet, ~size of a walnut

· 2 tablespoons white miso paste

· 1 tablespoon garlic powder

· ½ teaspoon turmeric


Sticky Garlic Sauce

· ¼ cup date sugar

· ¼ cup water

· 2 tablespoons low sodium soy sauce

· 2 tablespoons rice vinegar

· 4 cloves garlic, minced or crushed

· 1 tablespoon hot sauce (optional)


Baking the Salmon

· 1 sheet nori (optional)

· sesame seeds for garnish (optional)


Instructions

To prep the tofu:

1. Cut the tofu in half lengthwise, and then in half lengthwise again making 4 long skinny strips of tofu. Take one piece of tofu and place a chopstick on either side of the tofu to stop you from cutting all the way through, so the slices remain intact. Slice the tofu at an angle partway through repeatedly about ⅛" apart to give the tofu a flaky texture – repeat on opposite angle. Be careful handling them as they will be fragile.


For the marinade:

1. Add all marinade ingredients together in a blender. Blend until very smooth. Place the tofu in a resealable bag or dish and cover it with the marinade. Let marinate for a minimum of 30 minutes or overnight in the fridge.


To cook the plant based salmon:

1. If using the nori, cut the nori into strips to the same size as the tofu pieces. Gently remove a tofu piece from the marinade. Stick it to the back of the tofu. (Coat with extra marinade if needed).

2. In a small saucepan, add the sticky garlic sauce ingredients and simmer for 1 to 2 minutes, whisking regularly until thickened.

3. Gently lay plant based salmon pieces, nori side down, on a parchment lined baking sheet and spoon the sauce over top. Bake at 400 degrees for 10 minutes.

4. Garnish with sesame seeds and serve over whole grain rice or noodles.
