Simple Cornbread with Options

This is an easy recipe for folks new to baking and an opportunity to get creative! We made this in our Weekly Cooking Class!

Cornbread Cut into Squares


· 1 cup Cornmeal

· 1 cup Whole Wheat Flour

· 1 tablespoon Baking Powder

· ¼ cup Date Syrup

· ½ cup Unsweetened Applesauce

· 1 tablespoon Apple Cider Vinegar

· 1 tablespoon Ground Flax

· 3 tablespoons Water

· 1 ½ cups Unsweetened Plant Milk

· Optional: Pickled Jalapeño, diced

· Optional: Corn Kernels

· Optional: Onions, diced and sautéed


1. Preheat oven to 350 degrees.

2. Line an 8x8 baking pan with parchment paper.

3. Prepare flax egg by whisking flax and water in a small bowl. Set aside for a few minutes.

4. Mix dry ingredients and wet ingredients separately and mix well.

5. Combine wet and dry ingredients gently and be careful not to overmix.

6. Pour into baking pan and bake for 25 to 30 minutes or until a toothpick poked in the middle comes out clean.
