Oatmeal Raisin Cookies (No Sugar / Oil)

These oil and sugar free plant based cookies are a rich and sweet treat that can be used as a nostalgia transport vehicle.

Date Sweetened Oatmeal Raisin Cookies on a White Plate

Ingredients


  • 1 cup rolled oats

  • 1 cup Medjool dates, softened

  • 1 cup raw walnuts

  • 1 teaspoon vanilla

  • 1 tablespoon cinnamon

  • 1 tablespoon ground flax

  • ¼ cup raisins

  • 1/3 cup nut or seed butter

  • 1/3 cup unsweetened plant milk

  • Optional: 1 teaspoon baking powder*


Instructions

  1. Preheat oven to 350 degrees.

  2. Microwave pitted dates for 30 seconds or soak for 5 minutes in hot water.

  3. In a food processor, add everything except oats and raisins. Blend until crumbly.

  4. Add oats and combine well. Mixture should be a thick dough.

  5. Stir in raisins by hand or pulse food processor 3 to 5 times to evenly distribute and break up a little.

  6. Roll into 1-inch balls and press into cookies or shape into rectangles on parchment lined baking sheet. (Tip: Refrigerate dough for one hour and/or wet hands to prevent sticking while forming.)

  7. Bake for 15 minutes. Allow to cool slightly and enjoy!
