A light and slushy treat for a hot day! We made this in our Weekly Cooking Class!
3+ cups watermelon, frozen chunks
1/2 lime, juiced
2 to 4 tablespoons mint leaves (or 2 to four stems, leaves only)
Remove rind and chop watermelon into large chunks. Freeze for at least an hour. If you freeze for longer and your chunks are very hard, leave on the counter for a few minutes before adding to blender.
Add all ingredients to blender until well combined. Be careful not to overblend because we want to retain some slushiness.
