This chunky marinara is so thick you could use it as a dip! It's full of rich and healthy deliciousness. Plant Based. No oil.
Trent's Thick & Tasty Marina
Plant Based, No Oil. 3 tablespoons low sodium vegetable stock for sautéing ¼ cup (or more) low sodium vegetable stock
1 large onion diced
3 cloves garlic minced
2 large carrots diced finely
2 celery sticks diced finely
2 – 15 oz cans of tomato sauce*
2 – 15 oz cans of diced tomatoes*
1 - 8 oz can of tomato paste*
Spices (we vary quantities and combinations regularly):
½ cup basil
1 tbsp sage
1 tsp turmeric
1 ½ tsp red pepper flakes
2 bay leaves
Optional (choose one):
2 large handfuls of diced black olives
2 small handfuls of capers
2 tbsp vegan Worcestershire sauce
*There are a variety of no salt added tinned tomatoes out there and that is what we use.
Directions: Use veggie stock to sauté onions and garlic until transparent, then carrots and celery for about five minutes. Simmer the rest for as long as possible. Directions: Add everything to a slow cooker or CrockPot. Cook on high for 3 hours and on low for the rest of the day or until thickened. Jay’s Note: Watch out for low sodium labels that aren’t truly low sodium. Compare labels!
