Dressing:

· 1 cup raw cashews.

· 1/2 cup water.

· 2 tablespoons pure maple syrup or date syrup.

· 2 tablespoons apple cider vinegar.

· 1 teaspoon minced garlic or 1 teaspoon garlic powder.

· Black pepper to taste.


Salad:

· 2 medium broccoli crowns, finely chopped.

· 2 cups red grapes, halved.

· 1/4 cup sunflower seeds.

· 3/4 cup red onion.

· 1/4 cup raisins or dried cranberries.


1. Soak raw cashews for at least ten minutes, drain before using.

2. Add dressing ingredients to blender. Blend until smooth.

3. Add all salad ingredients and dressing to large bowl. Combine well.

4. Optional: Sliced radishes, other types of onions, other types of nuts or seeds, carrots, avocado, purple cabbage, sugar snap peas, etc.


Notes: Read all ingredient labels. For example, dried cranberries tend to have added sugar and sometimes oil.
