½ cup whole grain breadcrumbs
½ cup almond flour

1 + 1 teaspoons poultry seasoning
1 + 1 tablespoons garlic powder

Ground black pepper to taste
Optional: 1 teaspoon liquid aminos
Optional: fresh sage to garnish
1. Tofu prep suggestions: use the highest firmness and/or try freezing, thawing and pressing.
2. Preheat oven to 425 degrees.
3. Tear tofu into bite-sized chunks or slice into cutlets ½ inch thick.
4. Prepare batter in one medium dish by whisking together plant milk, chickpea flour, ¼ cup nutritional yeast, 1 teaspoon of poultry seasoning, 1 tablespoon each of garlic and onion powder (+ optional liquid aminos). Season with ground black pepper to taste. Set aside. Note: consistency should be thin pancake batter.
5. Prepare breading by whisking together breadcrumbs, almond flour, and remaining - nutritional yeast, poultry seasoning, garlic powder, and onion powder. *Recommend a flat bottom dish with sides.
6. Dip each tofu piece into batter with a fork and then dredge into bread crumb mixture until well coated. Add in a single layer onto a parchment lined baking sheet.
7. Bake for 25 to 30 minutes or until golden. Enjoy!
