Dragon Bones Chili
Vegan, No Oil and No Salt Added. 3 tablespoons veggie stock for sautéing (low sodium) 3 Anaheim chilis, roasted, peeled, chopped 3 poblano chilis, roasted, peeled, chopped 2 red bell peppers, diced 2 jalapenos chilis, minced 2 yellow onions, diced 1 head garlic, minced 3 tablespoons chili powder 2 teaspoons cayenne pepper 2 teaspoons ground coriander 2 teaspoons ground cumin 2 teaspoons granulated garlic 2 teaspoons granulated onion 2 teaspoons hot paprika 2 teaspoons freshly ground black pepper 2 cups tomato sauce (no salt added) 1 cup tomato paste (no salt added) 12 ounces lager beer 1 cup veggie stock (low sodium) Two 15.5-ounce cans kidney beans, with juice (no salt added) Two 15.5-ounce cans pinto beans, with juice (no salt added) Optional garnish: 1 bunch green onions, thinly sliced Optional additions: Gardein “meat”balls, Veggie Ground, or Veggie Sausage (high sodium, processed foods – can be used to help transition, but not ideal foods). Directions: Add everything to a slow cooker or CrockPot. Cook on high for 3 hours and on low for the rest of the day or until thickened. Jay’s Note: Watch out for low sodium labels that aren’t truly low sodium. Compare labels!
