Sloppy Lentil Joe’s
1 cup (or two medium) carrots diced
1 cup (or two large) celery stalks diced
1 small onion diced
2 garlic cloves minced
1 ½ cups of brown lentils
1 cup of tomato sauce
1 tablespoon tomato paste
½ cup unsweetened ketchup
2 tablespoons maple syrup (or date paste)
2 tablespoons yellow mustard
1 tablespoon chili powder
1 teaspoon paprika
1 pinch of pepper
3 to 4 cups of vegetable broth or stock
4 to 6 hours on high in slow cooker. Serve on whole grain, lightly toasted buns.
